The Spencer vineyard is a 43 acre vineyard nestled in the Jackson Valley at the western edge of Amador County. This distinct vineyard site takes advantage of 500 acres of neighboring irrigated pasture and five lakes that surround the region. The resulting moderate temperatures are further cooled by nighttime air spilling down the Sierras and becoming trapped in this quaint valley. Soils are well drained, alluvial, fine sandy loam soils that produce well-structured wines with good acidity levels.
In the cellar with this vineyard one of our biggest challenges is managing the tannins. Too much skin contact and the wine can be excessively tannic. To mitigate this, we taste the wine daily during fermentation and reduce the number of pump overs.
The resulting wine is an outstanding experience, plush full bodied tannins and layer upon layer of black fruit notes knitted together with spice and accented with just the right amount of new American oak (our favorite with Tempranillo).
Are a subjective overview of the flavors, textures and acidity of the wines as they might be experienced in the tasting room.
