What is Piquette?
Piquette is a very old style of wine dating back to roman times.
How is it made?
We start by picking grapes for a Rosé, so red grapes around 22 brix. These grapes are gently pressed and the sweet, lightly colored juice is fermented to make a traditional Rosé wine.
The remaining fresh grape skins have been pressed, so they don’t have all the sweet juice, but still have all the tannin, color and aromatic compounds in the skins. We move these to our standard macro bins for fermentation, adding just enough water to have a liquid, then simply allow it to natively start fermenting. From there it’s treated the same as a red wine, 2 punch downs of the cap per day until all the grape sugar is gone. We then pressed the wine & skins to neutral barrels where it is briefly aged until bottling. The resulting Piquette ends up with lower alcohol (10.5%) that typical red wine (14-15%) yet with loads of beautiful aromatics and tannin texture.
On the nose, tantalizing aromas of bright cherry are balanced with delicate notes of spice. Flavors of huckleberry and plum burst onto the palate while soft savory tannins lead you to a smooth finish.
