We’ve only produced Sauvignon Blanc once before, many years ago. When an opportunity came up to work with it again, we decided to revisit the varietal. In true Jeremy Wine Co. style, we didn’t make just one — we produced three distinct expressions: Sweet, Dry, and Fumé Blanc, each bottled separately.
The Sauvignon Blanc comes from McKenzie Vineyard, nestled along the edge of the Mokelumne River just outside of Lodi. The river’s cooling influence is clearly reflected in the wine’s clean, fruit-forward character.
The fruit was picked early in the morning to preserve cool temperatures, then brought straight to the winery for whole-cluster pressing. The juice was settled and chilled in tank, then inoculated to begin fermentation. and allowed to ferment to dryness before an early November bottling
This Sauvignon Blanc is one of my favorites of our dry wines. Plush and tropical notes on the nose move with citrus undertones foreshadowing an even more complex interaction of light, bright fruit on the palate. The wine opens as you sip and finishes in just the right amount of zippy acidity and light tingles of spritz.
