2025 Sweet Sauvignon Blanc

Vintage Notes:

We’ve only produced Sauvignon Blanc once before, many years ago. When an opportunity came up to work with it again, we decided to revisit the varietal. In true Jeremy Wine Co. style, we didn’t make just one — we produced three distinct expressions: Sweet, Dry, and Fumé Blanc, each bottled separately.

The sweet Sauvignon Blanc comes from McKenzie Vineyard, nestled along the edge of the Mokelumne River just outside of Lodi. The river’s cooling influence is clearly reflected in the wine’s clean, fruit-forward character.

The fruit was picked early in the morning to preserve cool temperatures, then brought straight to the winery for whole-cluster pressing. The juice was settled and chilled in tank, then inoculated to begin fermentation. This is where the fun begins. Each day we taste the fermenting wine, looking for that moment when the balance feels just right, enough residual sugar to offset the bright natural acidity. When that balance is reached, the tank is hard-chilled to around 38°, settled for several days, and then sterile filtered to remove any remaining active yeast.

The finished wine is beautifully fresh and aromatic, showing tropical pineapple and white stone fruit on the nose with lingering depth. On the palate, the balance of sweetness and acidity creates a mouthwatering experience, perfect on its own or paired with spicy foods.
